Fast Frittata


I love eggs. 

In fact there a few things that I enjoy more than a delicious egg dish. An egg is like an empty canvas offering countless options of creativity, and protein!


The following dish is offered as a faster alternative to one of my absolute favorite egg variations: frittata. Cooking fast frittata is very similar to making an omelet except the eggs go in after the fillings and the mixture is not flipped.

What you Need:

2-4 Organic cage Free Eggs, beaten

Chopped veggies of choice, sweet pepers one yellow one red, some red onion and baby spinach. 

Shredded cheese, sharp cheddar or Gouda is delicous but you can make this dairy free for the Fat Trimmers in life

Salsa, fresh is better from a deli or homemade

What you gotta Do:

Spray the pan with Olive oil turn to medium heat

Saute the veggies tossing in peppers first

Once the veggies are mostly done drop in spinach and let it wilt

At this point i move veggies over and add more oil so the eggs wont stick

Add the eggs and cover the bottom of the pan

Once the bottom has cooked some break up the mixture in a few places and let the uncooked egg take up the empty spots

Once the egg is almost completely cooked sprinkle in cheese all over the top.

After the bottom is crisp trasfer to a plate a top with salsa, add some turkey bacon on the side and enjoy!!
